Abstract
Željezo i cink esencijalni su mikronutrijenti važni za rast i održivo zdravlje. Željezo je neophodno za potporu vitalnih ljudskih funkcija kao što je opskrba tijela kisikom, a cink je element koji se kod ljudi nalazi u tragovima, no esencijalan je i ključan za brojne fiziološke procese. U prvim godinama života potrebne su velike količine željeza za razvoj mozga. Željezo ima ključnu ulogu u sinaptogenezi, sintezi neurotransmitera, neurotrofina i u mijelinizaciji. Nedostatak cinka ima negativne učinke na imunološki sustav, te se razvijaju patologije povezane sa kožom, plućima i gastrointestinalnim traktom koje mogu trajati sve do odrasle dobi. Nakon 6 mjeseci života zalihe koje je dijete prikupilo tijekom prenatalnog razvoja se troše, a potrebe povećavaju pa je u prehranu nužno uvesti namirnice bogate ovim mineralima. Glavni prehrambeni izvori željeza i cinka su meso, riba i mahunarke. Niska koncentracija i bioraspoloživost željeza i cinka u namirnicama biljnog podrijetla jedan su od glavnih uzroka velike rasprostranjenosti deficijencije u općoj populaciji. Stoga je nužno uzeti u obzir faktore koji inhibiraju apsorpciju ovih mikronutrijenata i primijeniti strategije kojima je možemo povećati.
Abstract (english)
Iron and zinc are essential micronutrients important for growth and sustained health. Iron is essential to support vital human functions such as body oxygen supply.Zinc is a trace element in humans, but it is essential and crucial for numerous physiological processes. In the first years of life, the brain requires large amounts of iron to develop. Iron plays a key role in synaptogenesis, synthesis of neurotransmitters, neurotrophins and in myelination. Zinc deficiency negatively affects the immune system, and pathologies associated with the skin, lungs and gastrointestinal tract develop, which may persist into adulthood. After the 6th months of life, the stores are depleted and the need increase, so it is necessary to introduce food rich in these minerals. The main dietary sources of iron and zinc are meat, fish and legumes. The low concentration and bioavailability of iron and zinc in plant food are one of the main causes of the high prevalence of deficiency in the general population. Therefore, it is necessary to consider the factors that can inhibit absorption of these minerals and apply strategies that may improve it.
