Abstract
U ovom radu navedena su glavna strukturalna i funkcionalna obilježja rakova odnosno Crustacea. Taksonomski rakovi su podijeljeni u pet razreda: Remipedia, Cephalocardia, Branchiopoda, Maxillopoda te Malacostraca. Gospodarski najvažnije vrste Jadrana su jastog, škamp, hlap i kozica. Rakovi kao i ostala hrana iz mora zauzima važno mjesto u ljudskoj prehrani. To su namirnice bogate omega-3 masnim kiselina, proteinima, vitaminima i mineralima. Njihova konzumacija ima brojne zdravstvene pogodnosti za ljudski organizam, no postoji i potencijalni zdravstveni rizik izloženosti teškim metalima uslijed pretjerane uporabe.
Abstract (english)
The main structural and functional characteristic of crustaceans are described in this study. Taxonomically, Crustaceans are divided in five classes: Remipedia, Cephalocardia Branchiopoda, Maxillopoda and Malacostraca. From the economic aspect, the most important species of the Adriatic Sea are: lobster, shrimp and prawn. Crustaceans, just like other seafood, have an important role in human nutrition. This food is rich in omega-3- fatty acids, proteins, vitamins and minerals. Consuming this food has many health benefits. However, there is a risk of exposure to heavy metals, especially at higher concentrations.
