Abstract
Kupus je dvogodišnja zeljasta biljka iz porodice kupusnjača. Prvi spomen kupusa datira u prapovijesno doba, a nalazimo ga u spisima starih Grka i Rimljana koji su ga koristili za prehranu, ali su poznavali i njegova ljekovita svojstva. Iako kupus ima izrazito nisku kalorijsku vrijednost, njegovo bogatstvo očituje se u obilju vitamina i minerala koje sadrži pa se koristi kao prirodan lijek za mnoge bolesti. Konzumira se svježi ili ukiseljen. Kombinirajući proizvodnju u kontinentalnom, mediteranskom i brdsko-planinskom području, kupus je prisutan na tržištu tijekom cijele godine. Kupus uspijeva gotovo na svim oraničnim i vrtnim tlima, no ipak najpovoljnija su duboka strukturna, blago kisela tla sa dobrim kapacitetom za vodu i zrak. Cilj ovog rada je ukazati na morfološke osobitosti kupusa, njegove prehrambene vrijednosti, ljekovitost, načine uzgoja i proizvodnje.
Abstract (english)
Cabbage is a two-year-old herbaceous plant from the cabbage family. The first mention of cabbage dates back to prehistoric times, and we find it in the writings of ancient Greeks and Romans who used it for nutrition, but who also knew its healing properties. Although cabbage has a very low caloric value, its richness is manifested in the abundance of vitamins and minerals that it contains, so it is used as a natural remedy for many diseases. It is consumed fresh or pickled/fermented. By combining production in continental, Mediterranean and mountainous areas, cabbage is present on the market throughout the whole year. Cabbage grows in almost all orchards and garden soils, but the most favorable are deep structural, slightly acidic soils with good water and air capacity. The aim of this paper is to point out the morphological characteristics of cabbage, its nutritional value, healing properties, cultivate methods and its production.
